chef’s philosophy


Beak Restaurant celebrates local wild-caught seafood through dishes honoring our traditions, community, and natural environment. My culinary philosophy revolves around practicing sustainability, fostering community, and showcasing quality local ingredients with a thoughtfully crafted presentation and globally inspired techniques. I believe in treating each ingredient with respect, creating a vibrant dining experience that reflects both innovation and our cultural roots, but at an accessible price point.

Beak’s core values are equity, transparency, and respect. As a woman of color, I know the importance of building an inclusive team with staff who reflect diverse backgrounds. Beak’s mission is centered not on maximizing profits but on uplifting its staff and local communities. I’m committed to fostering a workplace community where every member is heard, valued, and empowered to grow professionally at a competitive pay-rate. Additionally, we actively engage with local organizations and give back to Sitka through partnerships and charitable contributions. For example, as a gratuity-free restaurant, we pool any money left as tips and donate it to local causes.

The restaurant is also thoughtfully adorned with clear indicators that we offer a safe, inclusive environment. Our curated space actively celebrates Pride and Black Lives Matter, and we work to incorporate local Lingít language and culture into our space. Whereas traditional fine dining restaurants can be exclusive and out of touch with the communities they serve, we at Beak believe that quality food should be accessible to everyone. We want all diners to feel a sense of belonging and to know that, in our restaurant, they are home.

I am most inspired by food culture’s ability to bring people together. I strive to build connections through every dish, offering a sense of place and belonging that guests carry with them long after they leave. Food has a unique power to celebrate shared experiences and tell stories, and it has been such an honor for me to share my story by incorporating my Hispanic heritage into my locally inspired dishes.

For me, the culinary industry is more than just cooking—it’s creating a positive, thriving, and uplifting culture. This passion for people and food is what drives me. This is what makes Beak a place where our community, staff, and guests feel inspired and connected.
